Meet ambassador Tom Hunt
Tom Hunt is an acclaimed eco-chef, author, sustainable food expert and ambassador for the Soil Association. His main focus is to campaign for a fairer food system, working on projects to revive cooking heritage, reduce food waste, improve the environment and promote food equality.
Tom's Root to Fruit Eating philosophy takes a holistic approach to food and eating which supports the health of ourselves, our planet and its people.

What do you think are the biggest issues facing our food systems?
The industrialisation of our food system, abandonment of our countryside and move towards urbanisation is driving an industrial food system that is destructive for our planet, destructive for ourselves and destructive for our ecology. Everything that we can do to bring back value to our food and farmers will benefit us and our fellows directly.
Why is organic so important to you?
Organic agriculture is vital for preserving our wildlife, soil and ecology. The preservation of organic land is a preservation of life itself. We must eat and therefore we must farm, but in the most responsible way possible.
The more people eating organic, the more organic land will be kept and the more organic farmers will be kept in business. Something very important for all our futures.
If you could only switch to one organic item what would it be and why?
Potatoes because of the taste, but also because of sheer quantity produced each year in the UK and the heavy use of pesticides on the crop.
