Shitake, Seasonal Greens & Cashew Nut Stir-Fry with Quinoa and Wholegrain Rice

Soil Association licensee Seeds of Change is supporting the 2013 Organic Food Awards, and has supplied this delicious idea for a mushroom stir-fry

Shitak, greens and cashew nut stir fryReady in 10 minutes, serves 2


  • 1 pouch Seeds of Change Quinoa & Wholegrain Rice
  • 1 handful toasted cashews
  • Seasonal Greens – 300g French or Runner Beans, chopped into chunks
  • 1 tblsp Oyster sauce
  • 100g Shitake Mushrooms - sliced


  1. Heat wok and stir-fry shitake mushrooms and greens in a little sunflower oil for 2-3 mins
  2. Remove from heat and stir in oyster sauce and cashew nuts
  3. Serve over Seeds of Change Quinoa & Wholegrain Rice
